  1. Begin by washing 2 medium-sized organic apples thoroughly before slicing them thinly with the skin on.
  2. Peel and slice about 1–2 inches of fresh ginger root into thin pieces.
  3. In a medium saucepan, bring 4 cups of filtered water to a rolling boil over medium-high heat.
  4. Once boiling, add the sliced apples and ginger. Cover the saucepan with a lid and let it simmer for 20 to 30 minutes.
  5. Carefully remove the saucepan from heat and pour the tea through a sieve into cups or a teapot.
  6. While the tea is still warm, stir in your choice of sweetener—about 2 tablespoons of honey or maple syrup.
  7. If desired, add a splash of fresh lemon juice to the brewed tea—adjust to taste.
