- Preheat your waffle iron according to manufacturer’s instructions and grease with cooking spray or melted butter.
- In a large bowl, whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and salt until blended.
- In a separate bowl, mix buttermilk, melted butter, eggs, and honey until smooth and slightly frothy.
- Gently fold the wet ingredients into the dry ingredients until just combined; a few lumps are fine.
- Carefully fold in the shredded cheddar cheese and pickled jalapeños until evenly distributed.
- Pour 125–160 ml of batter onto the preheated waffle iron and cook for about 4-5 minutes until golden brown.
- Remove waffles from the iron and serve hot, topped with butter, extra cheese, sour cream, or salsa.
