- In a mixing bowl, dissolve kosher salt and sugar in warm water until fully combined. Submerge the chicken tenders in the brine and refrigerate for 30 minutes.
- While the chicken brines, combine black pepper, paprika, garlic powder, onion powder, and cayenne pepper in a bowl. Mix thoroughly.
- In another bowl, whisk together all-purpose flour and eggs until smooth. Add a splash of water if necessary. Incorporate half of the prepared seasoning mix into the wet batter.
- In a shallow dish, combine panko breadcrumbs with the remaining seasoning mix. Mix well.
- Remove chicken tenders from brine, pat dry. Dip each tender into the wet batter, then roll in the seasoned panko, pressing lightly to adhere.
- Preheat air fryer to 400°F (200°C) for about 5 minutes.
- Arrange the breaded chicken tenders in the air fryer basket in a single layer. Lightly spray with neutral oil and cook for 8-10 minutes, flipping halfway through.
