Cooking Instructions
  1. In a mixing bowl, dissolve kosher salt and sugar in warm water until fully combined. Submerge the chicken tenders in the brine and refrigerate for 30 minutes.
  2. While the chicken brines, combine black pepper, paprika, garlic powder, onion powder, and cayenne pepper in a bowl. Mix thoroughly.
  3. In another bowl, whisk together all-purpose flour and eggs until smooth. Add a splash of water if necessary. Incorporate half of the prepared seasoning mix into the wet batter.
  4. In a shallow dish, combine panko breadcrumbs with the remaining seasoning mix. Mix well.
  5. Remove chicken tenders from brine, pat dry. Dip each tender into the wet batter, then roll in the seasoned panko, pressing lightly to adhere.
  6. Preheat air fryer to 400°F (200°C) for about 5 minutes.
  7. Arrange the breaded chicken tenders in the air fryer basket in a single layer. Lightly spray with neutral oil and cook for 8-10 minutes, flipping halfway through.
  8. Once cooked, serve warm with your favorite dipping sauces.
