- Slowly pour in the cold sparkling water or beer while gently mixing the batter.
- Cover the bowl with plastic wrap and place it in the refrigerator for 15-20 minutes.
- Pat the fish fillets dry with paper towels and season lightly with salt and pepper.
- In a deep fryer or heavy pot, heat vegetable oil to around 350°F (175°C).
