Step-by-Step Instructions
  1. In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, and seasonings until well combined.
  2. Slowly pour in the cold sparkling water or beer while gently mixing the batter.
  3. Cover the bowl with plastic wrap and place it in the refrigerator for 15-20 minutes.
  4. Pat the fish fillets dry with paper towels and season lightly with salt and pepper.
  5. In a deep fryer or heavy pot, heat vegetable oil to around 350°F (175°C).
  6. Carefully dip each fish fillet into the prepared Crispy Fish Batter and fry in batches.
  7. Using a slotted spoon, lift the fried fillets from the oil and let them drain.
