- In a medium saucepan over medium heat, whisk together 2 cans of full-fat coconut milk, sugar, and a pinch of salt. Stir until the sugar dissolves, about 5-7 minutes. Remove from heat and stir in pure vanilla extract.
- Once the coconut base has cooled, pour it into your ice cream maker. Follow the manufacturer's instructions to churn, which takes about 20-25 minutes.
- Gently fold in toasted coconut chips and broken pieces of dark chocolate into the ice cream base with a spatula.
