- Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease with cooking spray.
- In a large bowl, mash 3 very ripe bananas until smooth with a few lumps.
- Add 2 eggs, ½ cup Greek yogurt, ¼ cup maple syrup, and 1 teaspoon vanilla extract to the mashed bananas and mix until smooth.
- Fold in 1½ cups old-fashioned oats, 1 teaspoon baking powder, ½ teaspoon baking soda, and ¼ teaspoon salt until just combined.
