  • 1/4 cup Almonds Alternative: walnuts or pecans.

  • 1 tbsp Oil Light olive oil recommended.

Step-by-Step Instructions for Honey Roasted Colorful Carrots
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Wash the rainbow carrots thoroughly. Peel if desired and cut into uniform pieces.
  3. In a large mixing bowl, toss the carrots with oil, salt, and freshly ground black pepper.
  4. Spread the seasoned carrots on the prepared baking sheet and add bay leaves and garlic cloves.
  5. Dot the carrots with butter and drizzle honey; add lemon juice for brightness.
  6. Roast the carrots for 30-35 minutes, turning halfway until tender and golden.
  7. Prepare the gremolata by mixing carrot greens, minced garlic, chopped almonds, lemon juice, and oil.
  8. Remove bay leaves and garlic before serving. Top with gremolata and enjoy!
