Method
 

Instructions
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the rainbow carrots, cutting them into uniform sizes as desired.
  3. In a large mixing bowl, toss carrots with oil, salt, and pepper until evenly coated.
  4. Spread the carrots on the baking sheet and add bay leaves and whole garlic cloves.
  5. Dot with unsalted butter, drizzle with honey, and squeeze lemon juice over the top.
  6. Roast for 30 to 35 minutes, turning halfway until fork-tender and golden.
  7. Prepare gremolata by chopping greens, almonds, and garlic, mixing with lemon juice and oil.
  8. Serve the roasted carrots with optional gremolata and a drizzle of lemon juice on top.
