Method
 

Step-by-Step Instructions
  1. Start by lightly greasing your silicone molds or muffin cups with cooking spray to prevent sticking.
  2. In a large mixing bowl, blend together the eggs, cottage cheese, milk, shredded cheese, salt, and pepper. Whisk until smooth.
  3. Pour the egg mixture into your prepared molds, filling each about three-quarters full.
  4. Pour 1 cup of water into the bottom of your Instant Pot, then place the metal trivet in the pot. Set the filled molds on the trivet and close the lid.
  5. Once cooking is complete, allow for a natural pressure release for 10 minutes.
  6. Carefully remove the molds from the Instant Pot and let the egg bites cool slightly before serving.
