  • 1 lb Ground Pork
  • 1 cup Onions finely chopped
  • 3 cloves Garlic minced
  • 1 cup Breadcrumbs use gluten-free breadcrumbs for gluten sensitivity
  • 2 large Eggs or flaxseed meal for vegan option
  • 0.5 cup Milk can be substituted with vegetable broth
For the Flavor Boost
  • 2 tbsp Worcestershire Sauce or soy sauce mixed with water
  • 2 tbsp Fresh Herbs like parsley or thyme
For the Glaze
  • 0.5 cup Ketchup or BBQ sauce
  • 2 tbsp Brown Sugar or honey/maple syrup
  • 1 tbsp Vinegar or Mustard or lemon juice

Equipment

  • Mixing Bowl
  • Loaf pan
  • Baking sheet
  • Oven
  • Meat Thermometer

Method

Preparation Steps
  1. In a large mixing bowl, combine the ground beef and pork with finely chopped onions and minced garlic. Add breadcrumbs, eggs, milk, Worcestershire sauce, and chosen herbs. Season with salt and pepper. Mix gently until just combined, avoiding overmixing.
  2. Transfer the meat mixture to a lined baking sheet or loaf pan. Shape it into a loaf, creating shallow indentations on top for glaze absorption.
  3. In a separate bowl, mix together ketchup, brown sugar, and your choice of vinegar or mustard until smooth. Brush the glaze over the top of the meatloaf.
  4. Preheat oven to 350°F (175°C). Bake for about 60 minutes until internal temperature reaches 160°F (71°C) and the top is browned.
  5. Remove from the oven and let it rest for 10 minutes. Garnish with freshly chopped parsley or chives, and serve with your favorite sides.
