- Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish generously.
- In a large bowl, mix 2 cups of old fashioned oats, 1 teaspoon of ground cinnamon, 1 tablespoon of baking powder, and a pinch of salt.
- In a separate bowl, whisk together 2 cups of almond milk, 1 cup of unsweetened applesauce, 1/3 cup of pure maple syrup, 1/4 cup of melted butter or coconut oil, and 2 beaten eggs. Stir in 1 teaspoon of vanilla extract.
- Gently fold the wet mixture into the dry ingredients, then add in 1 cup of diced apples.
