  • 1 cup Sun-Dried Tomatoes drained if packed in oil
  • 1 cup Fresh Basil or substitute with spinach
  • 1/4 cup Pine Nuts or swap with walnuts or almonds
  • 1/2 cup Parmesan Cheese or nutritional yeast for vegan option
  • 1/3 cup Olive Oil use high-quality extra virgin
  • 2 cloves Garlic adjust to taste
Pasta Ingredients
  • 8 oz Pasta spaghetti or other shape
  • 1 tbsp Salt for pasta water
  • 4 cups Water for cooking pasta

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook for 8-10 minutes until al dente.
  2. In a food processor, combine sun-dried tomatoes, basil, pine nuts, Parmesan, garlic, and salt. Pulse until finely chopped, then drizzle in olive oil while blending until smooth.
  3. Combine drained pasta and pesto in a mixing bowl. Toss gently to coat, adding reserved pasta water as needed for desired consistency.
  4. Serve the pasta, garnished with additional Parmesan and basil leaves. Drizzle with olive oil if desired.
