Ingredients
  

For the Beef
  • 1 lb Beef (sirloin or ground) Substitute with tofu or tempeh for vegetarian
For the Stir-Fry
  • 2 tbsp Vegetable Oil Any neutral oil with a high smoke point
  • 3 cloves Garlic Minced
  • 1 tbsp Ginger Grated
For the Veggies
  • 2 medium Carrots Thinly sliced
  • 1 cup Peas Frozen
  • 4 stalks Green Onions Chopped
For the Egg
  • 2 large Eggs Can be substituted with plant-based alternative
For the Rice
  • 4 cups Cold Rice Day-old for best texture
For Seasoning
  • 3 tbsp Soy Sauce Tamari for gluten-free
  • 1 tbsp Sesame Oil Optional but recommended
For Toppings
  • 2 tbsp Chopped Scallions For garnish
  • 1 tbsp Toasted Sesame Seeds Optional
  • to taste Sriracha For heat

Method
 

Preparation
  1. Gather all ingredients, chop vegetables, slice beef thinly, and crack eggs into a bowl.
  2. Break apart the cold rice and set everything aside.
Cooking
  1. Heat vegetable oil over medium-high heat, add beef, and stir-fry for 3-4 minutes until cooked.
  2. Transfer beef to a plate and keep warm.
  3. Add garlic and ginger to the skillet, sauté for 30 seconds.
  4. Add carrots, peas, and green onions, cooking for 2-3 minutes until soft.
  5. Push veggies to the side, scramble eggs on the empty side for 1-2 minutes, then mix with veggies.
  6. Increase heat, add rice, breaking clumps, and return beef to skillet, stir-fry for 2 minutes.
  7. Drizzle with soy sauce and sesame oil, stir to coat, cook for an additional 2-3 minutes.
  8. Remove from heat, serve hot, and garnish with scallions, sesame seeds, and sriracha.
