Preparation
- Gather all ingredients, chop vegetables, slice beef thinly, and crack eggs into a bowl.
- Break apart the cold rice and set everything aside.
Cooking
- Heat vegetable oil over medium-high heat, add beef, and stir-fry for 3-4 minutes until cooked.
- Transfer beef to a plate and keep warm.
- Add garlic and ginger to the skillet, sauté for 30 seconds.
- Add carrots, peas, and green onions, cooking for 2-3 minutes until soft.
- Push veggies to the side, scramble eggs on the empty side for 1-2 minutes, then mix with veggies.
- Increase heat, add rice, breaking clumps, and return beef to skillet, stir-fry for 2 minutes.
- Drizzle with soy sauce and sesame oil, stir to coat, cook for an additional 2-3 minutes.
- Remove from heat, serve hot, and garnish with scallions, sesame seeds, and sriracha.
