- Preheat your oven to 350°F (175°C). Gather all your ingredients and equipment.
- Shred your pre-cooked rotisserie chicken into bite-sized pieces.
- Crush the Doritos into small pieces, roughly the size of a quarter.
- In a large mixing bowl, combine the cream of chicken soup, sour cream, and seasonings. Stir until smooth.
- Add the shredded chicken and black beans (if using) to the creamy mixture and fold until coated.
- Spread half of the crushed Doritos in a greased baking dish. Pour the chicken mixture on top, smoothing it evenly.
- Sprinkle half of the shredded cheese and half of the green onions on top.
- Add the remaining crushed Doritos, then the rest of the cheese and green onions.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Let the casserole cool for about 5 minutes before serving. Add fresh toppings if desired.
