  1. In a small bowl, combine 1 cup of warm water with 1 tablespoon of sugar and 2¼ teaspoons of active dry yeast. Stir gently and let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together 3 cups of bread flour and 1½ teaspoons of salt.
  3. Pour the frothy yeast mixture into the flour-salt bowl and add 1 tablespoon of olive oil (if using). Stir until a sticky dough forms.
  4. Turn the dough out onto a floured surface and knead for about 8–10 minutes until smooth and elastic.
  5. Place the kneaded dough in a lightly oiled bowl, cover, and let rise in a warm area for 1-2 hours until doubled.
  6. Punch down the risen dough and divide into two pieces. Shape each into a long loaf.
  7. Place the loaves onto a parchment-lined baking sheet, cover, and let rise for another 30–45 minutes.
  8. Preheat the oven to 375°F. Score the tops of the loaves with a sharp knife.
