- Make the Pasta Dough: Mound about 2 cups of flour on a clean surface, make a well in the center, and crack in 3 large eggs along with a pinch of salt. Gradually incorporate the flour into the eggs with a fork until a shaggy dough forms, about 5 minutes. Knead for 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.
