  • 4 fillets Salmon fresh, wild-caught preferred
  • 3 tablespoons Honey can substitute with maple syrup
  • 3 tablespoons Whole Grain Mustard yellow mustard can be used as an alternative
For the Veggies
  • 2 tablespoons Olive Oil can substitute with melted butter
  • 1 tablespoon Lemon Zest lime zest can be used instead
  • 3 cloves Minced Garlic or use garlic powder if fresh is unavailable
  • 1 teaspoon Thyme dried thyme can be used
  • 2 cups Potatoes firm potatoes preferred; sweet potatoes can be used
  • 2 cups Broccoli asparagus or green beans can be swapped
  • to taste Salt to enhance flavors
  • to taste Pepper to enhance flavors

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare your baking sheet.
  2. Whisk together honey, whole grain mustard, olive oil, lemon zest, minced garlic, thyme, salt, and pepper to prepare the glaze.
  3. Set aside 3 tablespoons of glaze for the potatoes and coat the salmon fillets with the remaining glaze; marinate for 10 minutes.
  4. Spray the sheet pan with cooking spray or coat with olive oil.
  5. Toss halved potatoes in reserved glaze and arrange cut-side down on the sheet pan; bake for 15 minutes.
  6. Add broccoli on one side and place marinated salmon fillets in the center; drizzle broccoli with olive oil.
  7. Roast for an additional 8-13 minutes until salmon is flaking and broccoli is tender.
  8. Remove from oven and serve immediately, optionally with a wedge of lemon.
