Cooking Steps
- Preheat your oven to 300°F (150°C).
- In a mixing bowl, combine salt, ginger powder, garlic powder, and chili flakes. Stir well until evenly blended.
- Lay out four sheets of foil, placing one chicken leg quarter in the center of each. Rub the spice mix onto each piece of chicken.
- Fold the foil up and over the chicken, sealing the edges tightly to create a packet.
- Transfer the foil packets onto a baking sheet and bake for 1 hour and 30 minutes.
- Prepare the glaze by combining honey, soy sauce, fresh ginger slices, and a dash of chili flakes in a saucepan. Heat until boiling, then reduce to a simmer for 20 minutes.
- Once baking is complete, open the foil packets and transfer the chicken to a baking sheet. Brush glaze over the chicken and broil for 3-5 minutes.
- Remove from the oven and serve with chopped green onions or cilantro.
