  3. Lay out four sheets of foil, placing one chicken leg quarter in the center of each. Rub the spice mix onto each piece of chicken.
  4. Fold the foil up and over the chicken, sealing the edges tightly to create a packet.
  5. Transfer the foil packets onto a baking sheet and bake for 1 hour and 30 minutes.
  6. Prepare the glaze by combining honey, soy sauce, fresh ginger slices, and a dash of chili flakes in a saucepan. Heat until boiling, then reduce to a simmer for 20 minutes.
