  • 3 cloves garlic minced
  • 1 red bell pepper sliced
  • 1 zucchini sliced into half-moons
  • 1 cup cherry tomatoes halved
  • 2 cups fresh spinach
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste crushed red pepper flakes optional
  • to taste salt
  • to taste pepper
For the Garnish
  • 1 feta cheese crumbled
  • 1 tablespoon fresh parsley sprinkled
  • 2 lemon wedges

Method
 

Cooking Instructions
  1. Heat the oil in a large skillet over medium-high heat until shimmering.
  2. Add ground beef to the skillet, breaking it apart and cook until browned, about 5-7 minutes.
  3. Stir in onion and garlic, cooking until the onion is translucent, about 2-3 minutes.
  4. Add bell pepper and zucchini, stir-frying for 3-4 minutes until tender yet crisp.
  5. Incorporate cherry tomatoes and spinach, cooking for an additional 2-3 minutes until the spinach wilts.
  6. Season with oregano, basil, crushed red pepper, salt, and pepper; mix thoroughly and cook for an extra minute.
  7. Remove from heat, garnish with feta cheese and parsley, and serve with lemon wedges.
