- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once the oil shimmers, add the Italian sausage, breaking it apart with a wooden spoon. Sauté for about 6-8 minutes, until the sausage turns golden brown and is cooked through.
- While the sausage cooks, bring a large pot of salted water to a rolling boil. Add your favorite pasta, cooking according to the package directions until al dente, usually around 8-10 minutes.
- After the sausage is browned, stir in minced garlic and halved cherry tomatoes into the skillet. Cook for about 3-4 minutes, stirring gently until the tomatoes begin to soften.
- Once the tomatoes have softened, add the drained pasta to the skillet with the sausage mixture. Pour in the basil pesto and gently toss everything together, adding reserved pasta water as needed to achieve desired consistency.
- Remove from heat and sprinkle with freshly grated Parmesan cheese. Season to taste with salt and pepper, and serve immediately, garnished with fresh basil leaves.
