Step-by-Step Instructions
  1. In a medium bowl, whisk together the peanut butter, minced garlic, maple syrup, tamari, and rice vinegar or lime juice. Gradually add warm water until the sauce is smooth.
  2. Place the chicken into the slow cooker and pour in the peanut sauce, making sure the chicken is well coated. Cover and cook on high for 3-4 hours or low for 4-5 hours.
  3. Add the broccoli florets and sliced red bell pepper to the slow cooker. Stir to combine with the chicken and remaining sauce. Cover and cook on high for an additional 20-30 minutes.
  4. Transfer the cooked chicken to a cutting board. Use two forks to shred it, then return it to the slow cooker and mix with vegetables and juices.
  5. Drain any excess cooking liquid, if desired. Fold in the reserved peanut sauce to the shredded chicken mixture and serve warm, garnished as desired.
