For the Bites
  • 1 can Refried beans For Mini Taco Bites
  • 3 large Egg yolks For Deviled Eggs
  • 1 cup Ground beef For Southwestern Egg Rolls
  • 1 cup Black beans For Southwestern Egg Rolls
  • 1 cup Corn For Southwestern Egg Rolls
  • 2 medium Zucchini
For the Salsas
  • 1 can Canned tomatoes For Salsa
  • 1 cup Black beans
  • 1 cup Corn
For the Sweet Potato Skins
  • 4 large Sweet potatoes Bake until tender
  • 1 cup Cheese Shredded
  • 1 cup Bacon Crumbled
  • 1 cup Green onions Chopped

Method
 

Dips Preparation
  1. Prepare the dips by combining the ingredients for each in separate bowls, stirring until creamy.
  2. Cover and chill in the refrigerator for at least 30 minutes.
Mini Taco Bites
  1. Preheat oven to 375°F (190°C). Fill wrappers with refried beans and desired toppings, then bake for 15-20 minutes.
Deviled Eggs
  1. Cook eggs, cool, and peel. Mix yolks with spices, then refill egg whites.
Fried Southwestern Egg Rolls
  1. Fill wrappers with beef, beans, and corn. Fry in oil until golden brown.
Fried Zucchini Rounds
