Prepare the Peppers
- Preheat your oven to 375°F (190°C). Wash the bell peppers, cut off tops, and remove seeds and membranes.
Sauté Filling
- Heat olive oil in a skillet. Sauté chopped onion and minced garlic for 3-5 minutes until translucent.
Combine Ingredients
- Stir in black beans, cooked rice, diced tomatoes, and spices. Cook for 5-7 minutes, season with salt and pepper.
Stuff Peppers
- Spoon filling into each pepper and top with cheese if desired.
Bake
- Place peppers in a baking dish with a splash of water. Cover with foil and bake for 30-35 minutes.
Cool & Serve
- Let peppers cool for a few minutes before serving. Top with yogurt or herbs if desired.
