  • 1 lb Ground Beef Lean beef preferred
  • 1 medium Onion Diced, yellow or white preferred
  • 3 cloves Garlic Minced
  • 1 tbsp Italian Seasoning
  • to taste Salt & Pepper
  • 1 tbsp Cooking Oil Olive oil recommended
For the Saucy Layers
  • 2 cups Marinara Sauce Store-bought or homemade
  • 1 cup Water
  • 2 cups Spinach Fresh or frozen, excess moisture drained if frozen
For the Noodle Layers
  • 9 pieces Lasagna Noodles Uncooked, avoid no-boil
For the Cheesy Topping
  • 2 cups Mozzarella Cheese Shredded
  • 1 cup Cottage Cheese Drain excess moisture
  • 0.5 cup Parmesan Cheese Fresh grated

Method
 

Step-by-Step Instructions
  1. Heat olive oil over medium heat in a large skillet. Add ground beef, onion, and garlic, sauté until browned and onions are translucent, about 8-10 minutes. Stir in Italian seasoning, salt, and pepper to taste. Drain excess fat.
  2. Spray the insert of your slow cooker with cooking spray. Add the beef mixture to the bottom. Pour in marinara sauce and water, add spinach and broken lasagna noodles, scattering them throughout. Mix in 1.5 cups of shredded mozzarella cheese.
  3. Dollop cottage cheese over the layered mixture and stir gently.
  4. Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top.
  5. Cover and set the slow cooker to LOW. Cook for 3-4 hours until noodles are tender and edges are bubbling. Check at 3 hours to see how layers are progressing.
  6. Turn off the slow cooker and let the lasagna sit for 10-15 minutes before serving.
