- Heat olive oil over medium heat in a large skillet. Add ground beef, onion, and garlic, sauté until browned and onions are translucent, about 8-10 minutes. Stir in Italian seasoning, salt, and pepper to taste. Drain excess fat.
- Spray the insert of your slow cooker with cooking spray. Add the beef mixture to the bottom. Pour in marinara sauce and water, add spinach and broken lasagna noodles, scattering them throughout. Mix in 1.5 cups of shredded mozzarella cheese.
- Dollop cottage cheese over the layered mixture and stir gently.
- Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top.
- Cover and set the slow cooker to LOW. Cook for 3-4 hours until noodles are tender and edges are bubbling. Check at 3 hours to see how layers are progressing.
- Turn off the slow cooker and let the lasagna sit for 10-15 minutes before serving.
