For the Dressing
  • 1 cup Mayonnaise Adjust according to creaminess preference.
  • 1 tbsp Mustard (Yellow or Dijon) To taste.
  • 2 tbsp Sweet Pickle Relish Can omit for less sweetness.
  • 2 tbsp Lemon Juice Fresh is best.
  • to taste Salt & Black Pepper For seasoning.
Optional Additions
  • ¼ cup Chopped Parsley For garnish.
  • 1 cup Lettuce or Greens For serving.

Method
 

Step-by-Step Instructions
  1. Cook the eggs by boiling them in a saucepan covered with water for 10 minutes, then transfer to an ice bath, peel and chop.
  2. Cook the elbow macaroni in boiling water for 7-8 minutes, then drain and rinse under cold water.
  3. In a mixing bowl, combine macaroni, tuna, celery, and onion; cover and refrigerate for 20 minutes.
  4. Prepare the dressing by whisking together mayonnaise, mustard, pickle relish, lemon juice, salt, and pepper.
  5. Toss dressing with the salad mixture, serve over greens, and garnish with parsley if desired.
