Method
 

Cooking Instructions
  1. Heat a grill pan over medium-high heat for 5 minutes. Drizzle with olive oil and sear the chicken thighs for 5-7 minutes on each side until golden brown and 165°F internally. Transfer to a plate to rest.
  2. For tzatziki, grate and squeeze moisture from cucumbers. Mix with yogurt, minced garlic, lemon juice, and salt. Chill in the refrigerator.
  3. Wash and chop cucumbers, tomatoes, and other vegetables into uniform pieces. Arrange on a serving plate.
  4. Warm pita bread in a skillet for 1-2 minutes per side or wrap in foil and warm in a 350°F oven for 5-7 minutes.
  5. Assemble by placing chicken on one side of the plate, adding prepared vegetables, tzatziki, feta cheese, and olives.
  6. Serve immediately while warm, encouraging guests to use pita to scoop up chicken and tzatziki.
