- Heat a grill pan over medium-high heat for 5 minutes. Drizzle with olive oil and sear the chicken thighs for 5-7 minutes on each side until golden brown and 165°F internally. Transfer to a plate to rest.
- For tzatziki, grate and squeeze moisture from cucumbers. Mix with yogurt, minced garlic, lemon juice, and salt. Chill in the refrigerator.
- Wash and chop cucumbers, tomatoes, and other vegetables into uniform pieces. Arrange on a serving plate.
- Warm pita bread in a skillet for 1-2 minutes per side or wrap in foil and warm in a 350°F oven for 5-7 minutes.
- Assemble by placing chicken on one side of the plate, adding prepared vegetables, tzatziki, feta cheese, and olives.
