Method
 

Step‑by‑Step Instructions
  1. In a large skillet over medium heat, brown the beef with onion, green pepper, and garlic for about 5-7 minutes.
  2. Transfer the beef mixture into a crock pot, and add sweet potatoes, carrots, celery, fire-roasted tomatoes, tomato paste, and broth. Season and stir well.
  3. Cover and cook on low for 8-9 hours or on high for 5-6 hours until vegetables are tender.
  4. About 1 hour before serving, stir in kale and green beans.
  5. Before serving, taste and adjust seasoning if necessary.
  6. Ladle into bowls and garnish as desired. Serve warm.
