Method
 

Preparation and Assembly
  1. Melt butter in a large skillet over medium heat. Add chopped onion, sliced carrots, and chopped celery, cooking for about 5-7 minutes until softened.
  2. Stir in flour to form a roux, cooking for an additional 1-2 minutes. Gradually whisk in chicken broth and milk until smooth.
  3. Reduce heat to low and fold in cooked turkey and frozen peas. Season with salt, pepper, and fresh herbs. Simmer for 2-3 minutes.
  4. Preheat your oven to 375°F (190°C). Pour filling into greased pie dish, roll out pie crust, and cover the filling. Trim excess dough and crimp edges.
  5. Bake in the preheated oven for 30-35 minutes until crust is golden brown and filling is bubbling.
  6. Let cool for 10 minutes before serving. Garnish with fresh herbs.
