- In a heavy-bottomed pot, heat olive oil over medium heat. Add chopped onion, carrot, and celery, sautéing for 5-7 minutes until softened. Stir in minced garlic and cook for an additional minute.
- Add ground beef and Italian sausage to the pot, breaking apart with a wooden spoon. Cook for approximately 10 minutes until browned.
- Stir in tomato paste, letting it caramelize for 2-3 minutes, then keep stirring to prevent sticking.
- Pour in red wine and scrape up any browned bits from the bottom, allowing to bubble for about 5 minutes.
- Add crushed tomatoes, dried Italian seasoning, bay leaf, and salt and black pepper. Mix well and bring to a gentle simmer.
- Reduce heat to low, partially cover, and let the sauce simmer gently for 1.5 to 2 hours, stirring occasionally.
- In the last 10-15 minutes of cooking, stir in whole milk and adjust seasoning as needed.
