For the Topping
  • 2 cups Cheese Cheddar and Monterey Jack blend
  • 2 cups Salsa or Enchilada Sauce Use store-bought or homemade
For Garnishing
  • 1 cup Toppings Fresh cilantro, green onions, avocado, or sour cream

Equipment

  • large skillet
  • baking dish
  • microwave

Method

Step-by-Step Instructions
  1. In a large skillet, heat a drizzle of oil over medium heat. Add chopped onions and minced garlic, sautéing until they become fragrant and translucent, about 3-4 minutes. Stir in your choice of ground meat, cooking until browned and fully cooked, approximately 5-7 minutes. Next, mix in the beans and spices, allowing the mixture to thicken for another 2-3 minutes while stirring continuously.
  2. To prevent cracking, gently warm the flour tortillas in a dry skillet over low heat for about 1 minute on each side, just until pliable. Alternatively, you can wrap them in a damp cloth and microwave for 15-20 seconds.
  3. On each warmed tortilla, add a generous scoop of your savory filling, followed by a sprinkle of cheese. Carefully fold in the sides and roll the tortilla tightly from the bottom, placing each burrito seam-side down into a greased baking dish.
  4. Once all burritos are snugly in the dish, pour your chosen salsa or enchilada sauce evenly over the top, ensuring they are well covered. Finish by sprinkling a generous layer of additional cheese over the sauce.
  5. Preheat your oven to 375°F (190°C). Bake for 25-30 minutes, until the cheese is bubbly and golden brown.
  6. Once baked, remove the dish from the oven and let it sit for a few minutes. Top with fresh cilantro, sliced green onions, avocado, or sour cream and serve.
