  • 2 cloves minced garlic fresh garlic preferred
  • 1 can Ro-tel Original Diced Tomatoes & Green Chilies adds spice; swap with plain diced tomatoes for less heat
For the Noodles and Creamy Sauce
  • 12 ounces wide egg noodles gluten-free pasta can be used
  • 1 cup sour cream Greek yogurt can be used for a healthier alternative
  • 8 ounces softened cream cheese Neufchâtel can reduce fat
  • 1 tablespoon cornstarch can be omitted if not required for thickening
For the Topping
  • 2 cups shredded Colby jack cheese cheddar or a Mexican cheese blend also works

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Add ground beef and chopped onion, browning the beef until fully cooked, about 5-7 minutes. Drain excess fat.
  2. Stir in salt, black pepper, and tomato paste into the cooked beef mixture, cooking for another minute. Then add minced garlic and Ro-tel diced tomatoes. Simmer for 5 minutes.
  3. Bring a large pot of salted water to a boil. Add wide egg noodles and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  4. In a mixing bowl, whisk together sour cream, softened cream cheese, and cornstarch until smooth.
  5. Fold the drained noodles into the beef mixture, followed by the creamy sauce. Stir until well combined.
  6. Preheat your oven to 350°F (175°C). Transfer the mixture into a greased baking dish, spread evenly, and top with shredded Colby jack cheese. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
