Method

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C) and prepare a 9x9-inch baking pan by lining it with parchment paper.
  2. In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until it resembles wet sand and press evenly into the bottom of the prepared baking pan. Bake for about 10 minutes until fragrant.
  3. Beat the softened cream cheese and granulated sugar until creamy and smooth, about 2-3 minutes.
  4. Add the eggs, vanilla extract, and ground cinnamon to the mixture, and mix on low speed until just combined.
  5. Fold in the diced apples gently using a spatula to maintain their texture.
  6. Pour the cheesecake filling over the crust, spreading it evenly.
  7. Bake in the oven for 45-50 minutes until the center is set but slightly jiggly. Remove and cool at room temperature for 30 minutes.
  8. Refrigerate for at least 2 hours to fully set.
  9. Drizzle caramel sauce over the cooled bars and sprinkle with chopped nuts, if desired.
  10. Slice into squares for serving, and enjoy warm or cold.
