Ingredients
  

For the Marinade
  • 1 kg Chicken thighs Juicier than breasts.
  • 250 g Plain yogurt Helps tenderize chicken.
  • 4 cloves Garlic Minced.
  • 1 inch Ginger Grated.
  • 2 tbsp Garam Masala
  • 1 tbsp Chili powder Adjust per spice preference.
  • 1 tsp Turmeric
  • 1 tsp Cumin
  • 1 tsp Salt Essential for balancing flavors.
For the Sauce
  • 2 medium Onions Chopped.
  • 4 cloves Garlic Minced.
  • 1 inch Fresh ginger Minced.
  • 1 tbsp Cumin Reintroduced for warm notes.
  • 1 tbsp Coriander
  • 400 g Tomatoes (pureed) For tanginess.
  • 200 ml Heavy cream or coconut milk Choose according to preference.
For Garnish
  • 1 bunch Fresh cilantro Chopped.
  • 1 tbsp Lemon juice For enhancing flavor.

Method
 

Marinating and Cooking Chicken
  1. Combine chicken thighs, plain yogurt, minced garlic, grated ginger, and spices in a bowl. Mix well and refrigerate for at least 1 hour.
  2. Heat oil in a large skillet and sear the marinated chicken pieces, cooking them for about 5-7 minutes until browned.
  3. Remove chicken and set aside while preparing the sauce.
Preparing Sauce
  1. In the same skillet, sauté onions for about 5-6 minutes until golden. Add minced garlic and ginger, cooking for an additional 2 minutes.
  2. Stir in cumin and coriander, mixing well to combine.
  3. Add pureed tomatoes and let the mixture simmer for about 10 minutes, stirring occasionally.
Combining Chicken and Sauce
  1. Return the seared chicken to the skillet and pour in cream or coconut milk, stirring to combine.
  2. Let it simmer for another 5-7 minutes until chicken is fully cooked.
Garnishing
  1. Remove from heat, garnish with chopped cilantro and lemon juice, and serve hot with basmati rice or naan.

Notes
