Pancakes and Eggs
  1. In a large mixing bowl, whisk together 1 cup of all-purpose flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt until well combined.
  2. In a separate bowl, mix 1 cup of milk, 1 egg, and 2 tablespoons of melted butter. Combine the wet ingredients with the dry, stirring gently until just mixed.
  3. Heat a griddle or non-stick pan over medium heat and lightly grease with butter. Pour about 1/4 cup of the pancake batter onto the heated surface for each pancake.
  4. Cook for 2-3 minutes, or until bubbles appear, then flip and cook for another 2 minutes until golden brown.
  5. In a separate skillet, cook your bacon slices over medium heat for 8-10 minutes until crispy. Drain on paper towels.
  6. Whisk together 4 eggs with a splash of milk. Cook in a lightly buttered pan over medium heat, stirring gently for 3-4 minutes until just set.
