- Bring a large pot of salted water to a boil. Add the uncooked fettuccine and cook until al dente, about 10-12 minutes. Drain and set aside.
- Toss cut chicken with garlic powder and half of the Cajun seasoning in a bowl. Season shrimp with the remaining Cajun seasoning.
- Heat olive oil in a skillet over medium heat. Cook the seasoned chicken for 5-7 minutes until cooked through. Remove chicken and set aside.
- In the same skillet, melt butter and sauté minced garlic. Add the shrimp and cook for 2-3 minutes until pink. Set aside with the chicken.
- Add heavy cream and cream cheese in the skillet. Stir and cook until smooth, about 3-5 minutes. Add Parmesan cheese and season with salt and pepper.
- Return chicken and shrimp to the skillet, add drained pasta, and toss until coated. Adjust consistency with reserved pasta water if needed.
- Serve immediately, garnished with extra Parmesan or fresh herbs.
