- Heat 2 tablespoons of olive oil in a large heavy skillet over medium-high heat. Add the seasoned chicken breasts, searing for about 5 minutes per side until golden-brown. Transfer to a plate and tent with foil to keep warm.
- In the same skillet, reduce heat to medium and melt 2 tablespoons of butter. Stir in 3 minced garlic cloves for about 30 seconds until fragrant, scraping any browned bits from the pan.
- Pour in 1 cup of chicken broth (or white wine), bringing to a gentle simmer for about 2 minutes to combine flavors. Add 1 cup of heavy cream and ½ cup of grated Parmesan cheese, stirring and allowing the sauce to thicken for 3-4 minutes.
- Season the sauce with salt, pepper, and the juice of half a lemon. Stir in 1 tablespoon of freshly chopped herbs. Return the chicken to the skillet, spooning sauce over it and warming through for another minute.
- Serve hot alongside garlic mashed potatoes or steamed green beans, drizzling remaining sauce over the chicken.
