- Pat the salmon fillets dry using paper towels and season both sides with salt and black pepper.
- Heat olive oil and unsalted butter in a large skillet over medium-high heat. Sear salmon fillets for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes until opaque.
- Reduce heat to medium and sauté minced garlic in the remaining oil and butter for about 30 seconds until fragrant. Pour in dry white wine or chicken stock and scrape any browned bits from the skillet.
- Add low-sodium chicken or vegetable broth and bring to a gentle simmer. Gradually stir in heavy cream, allowing to warm for 2-3 minutes until slightly thickened.
- Stir in finely grated Parmesan cheese until melted, then mix in chopped fresh herbs. Return seared salmon to the pan and spoon sauce over each fillet.
