- Brown the ground beef in a large skillet over medium heat for about 7–10 minutes until no longer pink. Season with salt, pepper, and garlic powder. Drain excess grease.
- Transfer cooked beef to a large crockpot. Add shredded cheddar cheese, Velveeta cheese, diced dill pickles, mayonnaise, ketchup, yellow mustard, and pickle juice. Mix well until fully combined.
- Set crockpot to LOW setting and cook for 2–3 hours, stirring occasionally.
- Once bubbling and creamy, switch to WARM setting. Garnish with crispy bacon bits or fresh herbs, and serve with tortilla chips, slider buns, or veggie sticks.
