  • 2 pieces boneless, skinless chicken breasts

  • 3 tablespoons butter or use olive oil for a lighter meal
  • 3 tablespoons minced garlic fresh garlic preferred
  • 1 cup white rice rinsed before cooking
  • 2 cups chicken broth vegetable broth can be used for vegetarian option
For the Creamy Finish
  • 1 cup freshly grated Parmesan cheese for best melt
  • 1/2 of a lemon lemon juice lime juice can be substituted
For Garnish
  • to taste fresh parsley or basil

Method
 

Step-by-Step Instructions
  1. Season the chicken breasts with salt and pepper. Melt 2 tablespoons of butter in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes per side until golden brown and cooked through. Remove and keep warm.
  2. In the same skillet, add another tablespoon of butter, and sauté 3 tablespoons of minced garlic over medium-low heat for about 1-2 minutes until fragrant but not burned.
  3. Stir in 1 cup of rinsed white rice to coat with the garlic butter mixture. Pour in 2 cups of chicken broth and bring to a gentle boil. Lower heat, cover, and simmer for 15-20 minutes until tender.
  4. Once rice is cooked, stir in 1 cup of grated Parmesan and the juice of half a lemon. Slice the chicken and fold it back into the pan, mixing until creamy.
  5. Garnish with freshly chopped parsley and serve warm, enjoy!
