Preparation Steps
  1. Trim any excess fat and silverskin from the rack of lamb to ensure even cooking and a perfect crust. Season with salt and freshly cracked black pepper. Let rest for 20-30 minutes.
  2. In a mixing bowl, combine chopped pistachios with fresh herbs, minced garlic, lemon zest, and olive oil. Stir until cohesive.
  3. Heat olive oil in a skillet over medium-high heat. Sear the rack of lamb for 2-3 minutes on each side until golden brown.
  4. Brush a thin layer of Dijon mustard over the seared lamb to adhere the crust.
  5. Press the pistachio mixture firmly onto the mustard-coated rack of lamb, covering uniformly.
  6. Preheat oven to 400°F (200°C) and roast lamb for 15-20 minutes until reaching an internal temperature of 130°F (54°C).
  7. Remove from oven and let the rack rest for 5-10 minutes before slicing and serving.
