Method

Step-by-Step Instructions
  1. Preheat your oven to 400°F (205°C). Wrap whole garlic bulbs in foil, drizzling them with olive oil. Roast for about 20 minutes until the cloves feel soft.
  2. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, about 8-10 minutes. Reserve some pasta water before draining.
  3. Pat the steak dry, season with salt and pepper. Heat a skillet over medium-high heat with olive oil and sear the steak for about 4-5 minutes on each side.
  4. In the same skillet, mash in the roasted garlic, add heavy cream and bring to a gentle simmer. Whisk in Parmesan cheese until smooth and season as needed.
  5. Toss the drained spaghetti into the creamy sauce. If the sauce is too thick, add reserved pasta water until desired consistency. Fold in sliced steak.
  6. Plate the spaghetti and garnish with freshly chopped parsley. Serve hot and enjoy your low-carb creation!

Notes

For best results, use a meat thermometer to check steak doneness and gently reheat the alfredo sauce to avoid separation.
