Marinade Preparation
- In a medium bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, gochujang, rice vinegar, and freshly ground black pepper until well-combined.
Chicken Marinating
- Thinly slice boneless chicken thighs and add to the marinade, mixing gently to coat. Cover and refrigerate for at least 30 minutes.
Prep Vegetables
- While chicken marinates, thinly slice carrots and chop green onions. Set aside.
Cook Chicken
- Heat a large skillet over medium-high heat, add oil, and once hot, add the marinated chicken in a single layer. Cook for 5-7 minutes on each side.
Add Vegetables
- Add sliced carrots and chopped green onions to the skillet, stir-fry for an additional 3-5 minutes until vegetables are tender.
Finish and Serve
- Remove skillet from heat, garnish with toasted sesame seeds and fresh cilantro, and serve over jasmine rice.
