- Prepare the peaches by peeling and slicing them into wedges. Blanching can make peeling easier.
- In a medium saucepan, combine milk or cream with half of the sugar and vanilla extract. Heat until warm.
- In a separate bowl, whisk egg yolks with remaining sugar and cornstarch until pale and slightly thickened.
- Slowly add the warm milk mixture to the egg mixture while whisking. Return to saucepan and cook until thickened.
- Layer sliced peaches in serving dishes, then pour the custard over them.
