Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Heat vegetable oil in a large skillet. Sauté yellow squash and Vidalia onion for 5-7 minutes until tender.
  3. Combine sautéed vegetables with melted butter, sour cream, half of the Parmesan, and cheddar in a mixing bowl.
  4. Transfer the mixture to the greased baking dish and spread evenly.
  5. Mix remaining Parmesan with crushed crackers and sprinkle over the casserole. Bake for 25-30 minutes until golden brown.
  6. Allow to cool for 10 minutes before serving.
