Step-by-Step Instructions
  1. Combine the shredded cooked chicken with BBQ sauce in a bowl. Fold in diced onion and jalapeños if desired.
  2. Spread the BBQ chicken mixture over one half of a tortilla. Sprinkle cheddar cheese on top, then fold to seal.
  3. Heat a non-stick skillet over medium heat with olive oil or butter until melted.
  4. Cook the folded quesadilla for 3-4 minutes on one side until golden brown, then flip and cook the other side for another 3-4 minutes.
  5. Remove from skillet, let cool for a minute, then slice into wedges for serving.
  6. Serve with dipping sauces like BBQ, ranch, or salsa.
