Step-by-Step Instructions
  1. Prepare your ingredients: create a mound with flour, making a well. Add eggs, salt, and olive oil to the well.
  2. Mix the dough using a fork, gradually incorporating flour into the eggs. Knead until smooth and elastic, about 8-10 minutes. Cover and let rest for 30 minutes.
  3. Roll the dough out to about 1/16-inch thickness and cut into your desired pasta shape.
  4. Cook pasta in boiling salted water for 2-4 minutes until al dente. Reserve a cup of pasta water, then drain.
  5. Melt butter in a skillet, sauté garlic for 1-2 minutes. Stir in heavy cream and let it thicken for about 3-5 minutes.
  6. Toss drained pasta with sauce, adding reserved pasta water for a silkier texture. Serve immediately with grated Parmesan and herbs.
