- Preheat your oven to 325°F (160°C). Line a mini muffin tin with paper liners or grease the muffin cups.
- Combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar in a bowl. Press the mixture into the bottom of each muffin cup.
- In a large bowl, beat the cream cheese until smooth. Gradually add the remaining sugar and vanilla, mixing until silky.
- Spoon two tablespoons of filling over the crusts in each muffin cup and place in the oven to bake for 15-18 minutes.
