  • 2 cups Strawberries washed and chopped
  • 1 cup Rhubarb washed and chopped
  • ¾ cup Sugar adjust according to sweetness
  • 1 tablespoon Lemon Juice fresh-squeezed recommended
  • 2 tablespoons Cornstarch or all-purpose flour as alternative
For the Pastry
  • 1 pound Puff Pastry thawed
  • 1 large Egg for wash
Optional Glaze
  • ½ cup Powdered Sugar
  • 1 teaspoon Vanilla Extract

Method
 

Preparation Steps
  1. Wash and chop strawberries and rhubarb. Combine in a saucepan with sugar, lemon juice, and cornstarch. Cook until thick and bubbly, about 5-7 minutes. Let cool.
  2. Preheat oven to 400°F (200°C). Roll out puff pastry on a floured countertop and cut into 4x4 inch squares.
  3. Place filling on one side of each pastry square, fold and seal edges. Crimp with a fork.
  4. Brush with egg wash. Bake for 20-25 minutes until golden brown.
  5. Let cool on wire rack. Optionally glaze with powdered sugar and vanilla extract before serving.
