  • 1 cup Greek Yogurt Can substitute with buttermilk
  • 2 cloves Minced Garlic Fresh garlic is best
  • 2 tablespoons Lemon Juice Fresh juice is preferable
  • 2 tablespoons Olive Oil High smoke point oil can be used
  • 1 teaspoon Cumin Ground coriander can be used instead
  • 1 teaspoon Paprika Smoked paprika enhances flavor
  • 1 teaspoon Oregano Fresh oregano provides a brighter flavor
  • Salt & Pepper Adjust to taste
Kabobs
  • 1 pound Chicken Breast Cut into bite-sized cubes
  • 4-6 Wooden Skewers Soak in water for 30 minutes

Method
 

Preparation
  1. In a large bowl, whisk together Greek yogurt, minced garlic, lemon juice, olive oil, cumin, paprika, oregano, salt, and pepper until smooth.
  2. Cut the chicken breast into bite-sized cubes and add them to the marinade, making sure each piece is well-coated. Cover and refrigerate for at least 2 hours or overnight.
  3. Soak wooden skewers in water for about 30 minutes to prevent burning. Thread the marinated chicken onto the skewers.
  4. Preheat your grill to medium-high heat, around 400°F (200°C).
  5. Grill the skewers for about 4-5 minutes on each side until golden-brown and the internal temperature reaches 165°F (74°C).
  6. Let the kabobs rest for a few minutes before serving. Garnish with chopped parsley or lemon.
