Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C). Prepare a greased wire rack in a roasting pan.
  2. Boil 1 cup of apple cider in a saucepan until reduced to about ½ cup, around 10-15 minutes.
  3. Pat the chicken dry with paper towels. Season the cavity with salt and pepper.
  4. Stuff the chicken cavity with quartered apple, onion, and fresh thyme.
  5. Rub softened butter over the chicken and season the exterior with salt and pepper.
  6. Tie the chicken legs together with kitchen twine and place breast-side up on the rack.
  7. Roast in the oven for 30 minutes, then reduce the temperature to 350°F (175°C).
  8. Baste the chicken with the reduced glaze every 15 minutes during the last 30-45 minutes.
  9. Optionally switch to the broiler for 2-5 minutes for extra crispy skin.
  10. Let the chicken rest for at least 10-15 minutes before carving.
