- Preheat your oven to 450°F (232°C). Prepare a greased wire rack in a roasting pan.
- Boil 1 cup of apple cider in a saucepan until reduced to about ½ cup, around 10-15 minutes.
- Pat the chicken dry with paper towels. Season the cavity with salt and pepper.
- Stuff the chicken cavity with quartered apple, onion, and fresh thyme.
- Rub softened butter over the chicken and season the exterior with salt and pepper.
- Tie the chicken legs together with kitchen twine and place breast-side up on the rack.
- Roast in the oven for 30 minutes, then reduce the temperature to 350°F (175°C).
- Baste the chicken with the reduced glaze every 15 minutes during the last 30-45 minutes.
- Optionally switch to the broiler for 2-5 minutes for extra crispy skin.
- Let the chicken rest for at least 10-15 minutes before carving.
